INGREDIENTS
Vegan Breakfast Burrito with Tofu Scramble and Crispy Hash Browns (for 2 burritos)
Tofu Scramble
1/4 cup diced brown onion
1 garlic clove, minced
150g firm tofu, crumbled
1 tbsp plain flour
1 tbsp nutritional yeast
pinch ground turmeric
pinch sweet paprika
pinch black salt (kala namak)
1/3 cup soy milk
1 tbsp vegan butter
Filling
4 frozen hash browns
1 ripe avocado, sliced
Handful of vegan cheese, grated
Ketchup, barbecue sauce, brown sauce, vegan mayo, or sriracha (optional)
Wrap
2 large vegan tortilla (use gluten-free if needed)
METHOD
Make the Tofu Scramble
Heat a frying pan over medium heat and add the diced onion and minced garlic. Sauté for about 5 minutes until softened.
Crumble the tofu into small pieces using your hands and add it to the pan. Cook for another 5 minutes, stirring occasionally.
Sprinkle in the plain flour, nutritional yeast, turmeric, sweet paprika, and black salt. Stir well to evenly coat the tofu.
Gradually pour in the soy milk and add the vegan butter. Stir constantly until the tofu is creamy and evenly coated. Adjust the milk for your desired consistency.
Prepare the Hash Browns
Place the frozen hash browns in a toaster and pop them down a few times until they are dark golden and crispy. (Alternatively, follow packet instructions for oven cooking.)
Once done, set aside.
Assemble the Burritos
Heat a large frying pan on low-medium heat with a little oil.
Place a tortilla in the pan and sprinkle over the grated vegan cheese. Heat for 2 minutes, until the cheese starts to melt. (Alternatively, microwave the tortilla with cheese for 30 seconds.)
Remove the tortilla from the pan and layer the fillings down the centre: tofu scramble, crispy hash browns, avocado slices, and your choice of sauce.
Fold the sides of the tortilla over the ends, then roll tightly into a burrito.
Cut in half and enjoy immediately while warm!
