INGREDIENTS
Vegan TVP Cheeseburger Wraps
1 cup textured vegetable protein
1 cup boiling water
1 brown onion, diced
4 garlic cloves, minced
1/4 cup tomato sauce
2 tbsp soy sauce
1 tbsp dijon mustard
1 tbsp liquid smoke
Tortilla wraps
Handful of vegan cheese
Tomato slices
Sliced pickles
METHOD
Combine the textured vegetable protein with boiling water in a heatproof bowl. Let it sit for 5-10 minutes until it reaches a minced texture.
In a fry pan over medium heat, add a bit of olive oil and diced onion. Cook for 1-2 minutes until the onions are golden, stirring occasionally. Lower the heat, add the minced garlic, and stir until fragrant.
Add the rehydrated TVP to the pan and mix well.
Stir in the tomato sauce, soy sauce, dijon mustard, and liquid smoke. Let the mixture cook for 3-5 minutes to thicken slightly and allow the flavours to meld.
Lay out a tortilla wrap. On the bottom third, sprinkle vegan cheese, add a few tomato slices, and place sliced pickles on top.
Spoon a quarter of the TVP mixture over the veggies.
