Easy Vegan Sloppy Joes

This is the IDEAL recipe for when you have a bunch of people heading over and you only have 20 minutes to whip it up!
INGREDIENTS
Sloppy Joes:
1 Brown onion, diced
1/2 Green capsicum, diced
3 Garlic cloves, minced
400g (1 can) of Lentils, drained and rinsed
Handful of oregano
1 Can of diced tomatoes
2 Tbsp of tomato paste
3 Tbsp maple syrup
1 Tbsp dijon mustard
METHOD
Heat some oil in a fry pan, adding onion, capsicum and garlic. Cooking until slightly browned
Add lentils and oregano. Stirring for a couple of minutes
Add in diced tomatoes, tomato paste, maple syrup and dijon mustard. Simmer and stir until sauce thickens, about 5-10 minutes
