Easy Vegan Sloppy Joes

Looking for an affordable meal that is tasty and will feed the masses? Look no further than this delicious vegan-friendly sloppy joes recipe.

This is the IDEAL recipe for when you have a bunch of people heading over and you only have 20 minutes to whip it up!

INGREDIENTS

Sloppy Joes:

  • 1 Brown onion, diced

  • 1/2 Green capsicum, diced

  • 3 Garlic cloves, minced

  • 400g (1 can) of Lentils, drained and rinsed

  • Handful of oregano

  • 1 Can of diced tomatoes

  • 2 Tbsp of tomato paste

  • 3 Tbsp maple syrup

  • 1 Tbsp dijon mustard

METHOD

  • Heat some oil in a fry pan, adding onion, capsicum and garlic. Cooking until slightly browned

  • Add lentils and oregano. Stirring for a couple of minutes

  • Add in diced tomatoes, tomato paste, maple syrup and dijon mustard. Simmer and stir until sauce thickens, about 5-10 minutes
