Simple, Creamy Mushroom Stroganoff

INGREDIENTS
Mushroom Stroganoff
1 red onion, finely diced
2 cloves garlic, minced
2 cups mushrooms, sliced
1 tbsp parsley, dried
1 tsp smoked paprika
2 cups vegetable stock
2 tsp nutritional yeast
1 tbsp soy sauce
1 cup plant cream
pepper to taste
METHOD
In a frypan with oil, saute red onions until soft
Add in garlic and mushrooms and cook until the mushrooms are soft, about 5 minutes
Add parsley and smoked paprika then cook for another 1 min until fragrant.
Add in stock, nutritional yeast, soy sauce and cream. Simmer on a low heat for about 10 mins or until sauce thickens and reduces. Season with pepper.
