INGREDIENTS

Vegan Mango Float

◾ 2 cups heavy vegan cream

◾320g sweetened condensed coconut milk

◾ 1 tsp vanilla extract

◾ 200g Digestives biscuits plain original (or similar plain sweet biscuits), finely crumbed

◾ 3 ripe mangoes, diced

METHOD

◾ Place heavy cream, sweetened condensed coconut milk and vanilla extract into stand mixer bowl. Whisk on a medium speed until mixture doubles - this may take about 5 minutes.

◾ In a rectangle baking dish, place in a third of the whipped cream mixture and evenly spread, followed by a layer of biscuit crumbs and then a layer of a third of the diced mango.

◾ Repeat the above step and then finish with a layer of cream and mango. Place in the fridge overnight to set.
