INGREDIENTS
Vegan Weet-Bix Slice Recipe
1/2 cup of maple syrup
1/2 cup of vegan butter
1 cup of sugar
3 crushed Weet-Bix biscuits
3 tablespoons of desiccated coconut
3/4 cup of self-raising flour
1 cup of rolled oats
1 tablespoon of chia seeds
3/4 cup of dried fruit (such as blueberries or sultanas)
METHOD
Pre heat your oven to 170°C (340°F).
In a small saucepan over medium heat, combine the maple syrup, vegan butter, and sugar. Stir the mixture until it's well combined, then remove it from the heat.
In a mixing bowl, add the crushed Weet-Bix, desiccated coconut, self-raising flour, rolled oats, chia seeds, and dried fruit. Mix these dry ingredients together until they are thoroughly combined.
Pour the previously prepared wet mixture into the bowl of dry ingredients. Stir everything together until the wet and dry ingredients are fully combined.
Transfer the mixture to a prepared baking tray, spreading it out evenly and ensuring it covers the tray uniformly.
Place the baking tray in an oven preheated to 170°C (340°F) and bake for approximately 25 minutes. Keep a close eye on it to ensure it doesn't overcook.
Once removed from the oven, allow the slice to cool before cutting it into slices or squares. This cooling step ensures the slice sets properly before serving.
