Fluffiest Vegan Blueberry Muffins
There's not too much better than smelling delicious muffins, especially blueberry muffins!
Blueberry muffins are definitely a top tier muffin, and this simple vegan friendly recipe is definitely a keeper.
This blueberry muffin recipe utilises bananas, and you can either use fresh or dried blueberries (or BOTH!) for this recipe.
INGREDIENTS
◾ 1 Banana
◾ 1/4 cup vegan butter (melted)
◾ 1 cup sugar
◾ 1 cup soy milk
◾ 2 cups plain flour
◾ 1 tsp salt
◾ 1 tsp bi carb soda
◾ 1/2 cup blueberries (dried or fresh)
METHOD
▪️ Pre heat oven to 180c and prepare a muffin tray
▪️ In a large bowl, mash the banana with a fork until soft. Add in butter, sugar and soy milk and mix to combine
▪️ In a separate bowl, combine flour, salt, bi carb soda. Add this flour mixture with wet ingredients and gently fold until well combined.
▪️ Add in blueberries and fold through batter mixture
▪️ Spoon batter into muffin tray
▪️ Bake muffins for about 25 minutes. Allow to cool in the muffin tray
