½ tsp bi-carb soda
1 tsp dried oregano
½ tsp garlic powder

2 tbsp tomato paste
½ cup vegan cheese, grated
½ cup cherry tomatoes, diced
⅓ cup red capsicum, diced
¼ cup sun-dried tomatoes, chopped
1 tsp dried basil
METHOD
Preheat your oven to 180°C and line a 12-hole muffin tray with paper cases or lightly grease with oil.
In a small bowl, mix the soy milk and apple cider vinegar. Let it sit for 5 minutes to curdle—this will help make the muffins soft and fluffy.
In a large mixing bowl, whisk together the flour, baking powder, bi-carb soda, oregano, garlic powder, salt, and pepper.
