INGREDIENTS
Vegan Coconut Macaroons:
5 cups of desiccated coconut
1 can of coconut condensed milk
2 tbsp vanilla extract
Chocolate for dipping
METHOD
Preheat oven at 160c
Add desiccated coconut, coconut condensed milk and vanilla extract to a large mixing bowl, mixing to combine
Prepare an oven tray and a bowl of water. With slightly wet hands, roll mixture into small balls and place on oven tray
Place in oven for about 10-15mins or until slightly browned. Take out of oven and allow to cool (and firm up) for at least 5-10mins
Melt chocolate and place macaroons in chocolate. Place in the fridge to allow chocolate to set
