INGREDIENTS

Vegan Weet-Bix Slice Recipe

  • 1/2 cup of maple syrup

  • 1/2 cup of vegan butter

  • 1 cup of sugar

  • 3 crushed Weet-Bix biscuits

  • 3 tablespoons of desiccated coconut

  • 3/4 cup of self-raising flour

  • 1 cup of rolled oats

  • 1 tablespoon of chia seeds

  • 3/4 cup of dried fruit (such as blueberries or sultanas)

METHOD

  • Pre heat your oven to 170°C (340°F).

  • In a small saucepan over medium heat, combine the maple syrup, vegan butter, and sugar. Stir the mixture until it's well combined, then remove it from the heat.

  • In a mixing bowl, add the crushed Weet-Bix, desiccated coconut, self-raising flour, rolled oats, chia seeds, and dried fruit. Mix these dry ingredients together until they are thoroughly combined.

  • Pour the previously prepared wet mixture into the bowl of dry ingredients. Stir everything together until the wet and dry ingredients are fully combined.

  • Transfer the mixture to a prepared baking tray, spreading it out evenly and ensuring it covers the tray uniformly.
