INGREDIENTS

Vegan Apple Crumble

  • 770g of tin apple slices

  • Juice of 1 lemon

  • 2/3 cup of coconut sugar

  • 1 & 1/2 tbsp of cinnamon powder

  • 3 tbsp of cornflour

  • 1 tsp of ginger ground

  • Pinch of nutmeg

  • 1 cup of rolled oats

  • 1/2 cup of almond meal

  • 1/2 cup of plain flour

  • 1/2 cup of coconut sugar

  • 1/2 cup of brown sugar

  • 1/2 cup of walnuts, chopped

  • 1 tsp of cinnamon powder

  • Salt, pinch

  • 1/2 cup of coconut oil

METHOD

  • Preheat your oven to 180°C (350°F)

  • In a bowl, combine the tin apple slices, lemon juice, coconut sugar, cinnamon, cornflour, ground ginger, and nutmeg. Mix well to ensure the apples are evenly coated with the spices and sugar.

  • Transfer the apple mixture into an oven dish, spreading it out evenly to create a smooth layer at the bottom.

  • In a separate bowl, prepare the oat crumble topping by combining the rolled oats, almond meal, flour, coconut sugar, brown sugar, chopped walnuts, cinnamon, and a pinch of salt. Mix everything together until well combined.

  • Add the coconut oil to the oat mixture, using your fingers to rub it in until the mixture resembles coarse breadcrumbs. This will help create that irresistible crunchy texture.

  • Sprinkle the oat crumble topping evenly over the apple mixture in the oven dish, ensuring that all the apples are covered.

  • Bake the vegan apple crumble for approximately 40 minutes, or until the topping is golden brown and crispy.

  • Once baked, remove the apple crumble from the oven and allow it to cool slightly before serving. Serve warm with a scoop of dairy-free ice cream or a dollop of coconut yogurt for the ultimate indulgence.
