Creamy Cheesy Tomato Pasta
Why is pasta just so damn comforting!?
As the colder days start rolling in, serving up a delicious and creamy pasta is EXACTLY what is needed.
This recipe is creamy, cheesy and so flavoursome... OH and incredibly easy to put together! Try it for yourself
INGREDIENTS
Creamy Cheesy Tomato Pasta:
2 Cup dry elbow pasta
1 Brown onion, diced
1 Zucchini, diced
1 Cup vegetable stock
1 Cup plant milk of choice (cashew works best)
1 Cup tomato sauce
1 Tsp oregano
1 Tsp parsley
100g Spinach
3 Tbsp nutritional yeast
2 Tbsp coconut milk
1 Tsp salt
1/2 Tsp black pepper
METHOD
Prepare pasta as per packet instructions
In a pan with some olive oil, brown onion and zucchini for a few minutes.
Add in stock and allow to simmer until stock is mostly gone. This may take about 10 minutes
Add in plant milk, tomato sauce, oregano and parsley. Allow to simmer until sauce begins to thicken.
Stir in spinach and continue to stir until it wilts down. Once this has been done, add in nutritional yeast, coconut milk, salt and pepper.
Finally, add in cooked pasta and stir to fully coat in sauce.
