Lemonade Vegan Scones

This scone recipe is extremely straight forward and the secret ingredient to that rise is…. LEMONADE!

Yes, the bubbles in the lemonade act as a raising agent. This recipe results in a very straight forward and fool-proof scone.

INGREDIENTS

Lemonade Vegan Scones

  • 4 & 1/2 cups of self raising flour

  • 220 ml lemonade

  • 200g creme fraiche or a thick vegan cream

METHOD

◾ Preheat the oven to 200c fan

◾ In a large mixing bowl, sift the flour and then slowly pour in the lemonade, stirring to combine.

◾ Fold in the creme fraiche into the mixture (you may need to use your hands), stirring until it forms into a dough ball.

◾ Place the dough ball onto a floured flat surface and gently roll out until it’s about 3cm thick. Cut out scones by using a round cutter

◾ Place scones onto a prepared baking tray and place in oven for about 10 minutes, or until slightly golden.

◾ Allow to cool before serving
