Banana Crumb Muffins

I’m absolutely in love with making muffins, and none are more easier than BANANA MUFFINS!

A lot of vegan muffin recipes include egg replacement ingredients such as chia or flax seeds, however this recipe eliminates all that and keeps it simple and DELICIOUS… and honestly, the crumb on the top of these banana muffins simply seal the deal of these being the tastiest banana muffins you’ll ever try!

INGREDIENTS

Banana Muffin

  • 3 Bananas

  • 1/4 Cup of Vegan Butter, Melted

  • 1 Cup of Sugar

  • 2 Cups of Plain Flour

  • 1 Tsp of Salt

  • 1 Tsp of Bi-carb Soda

Crumb Topping

  • 1/4 Cup of Sugar

  • 1/2 Cup of Plain Flour

  • 2 Tbsp of Vegan Butter

METHOD

  • Pre-heat oven to 180c and prepare 12 cup muffin tray by coating with butter/oil.

  • Place 3 ripe bananas into a mixing bowl, mash with a fork until soft.

  • Add sugar, butter to mixing bowl with banana and mix to combine.

  • In a separate bowl combine flour, salt and bi-carb soda until well mixed. Combine this mixture with banana mixture, stirring gently until mixed well together.

  • Carefully spoon batter into muffin tray.

  • To make the crumb topping, place sugar, flour and butter into a mixing bowl. Combine together with fingers until it resembles a sand-like texture.

  • Apply crumb mixture over muffin batter.

  • Bake muffins for about 23mins. Once finished allow to cool in muffin tray for 5mins before serving.
