This vegan corn fritter recipe is a favourite in this household, with the kids generally demolishing a few of these with a dipping sauce of choice.

We start this vegan corn fritters recipe by preparing our flax egg. What is a flax egg? It’s an incredible egg substitute and works perfectly as a binding ingredient for a variety of recipes, including this vegan corn fritters recipe.

To make the flax egg, all you need to do is combine 1 tbsp of ground flaxseed and mix with 3 tbsp of water. Allow this to sit for 5-10 minutes and your mixture will begin to resemble a gooey egg-like texture - perfect to help bind the remaining ingredients in this vegan corn fritter.

INGREDIENTS

Corn Fritters - Vegan Corn Fritters

  • 1 tbsp ground flaxseed⁠

  • 3 tbsp water⁠

  • 2 cups corn kernels⁠

  • 1 tsp baking powder⁠

  • 3/4 cup plain flour⁠

  • 1/2 tsp salt⁠

  • 1 tbsp onion powder⁠

METHOD

  • Mix flaxseed & water into a small bowl. Let sit so it thickens⁠

  • Put 1.5 cups of corn, flax egg, and all remaining ingredients into a food processor. Process until a smooth batter forms⁠

  • Add batter and remaining corn to a large bowl and mix to combine⁠

  • Heat oil in a fry pan on medium heat, cooking fritters for about 2 minutes each side⁠
