Extra Crispy Vegan Wedges

I love potatoes in just about any form to be honest… but I especially love them in chip form!

Having hot chips handy in the freezer is honestly a must as a parent, as you honestly never know when the kids are going to nag for their next snack.

I used to buy those big 2kg bags of hot chips or wedges from Costco, but I eventually thought “why don’t I make my own vegan wedges?”. I honestly haven’t looked back since.

Thankfully, potatoes are pretty cheap, the last in your pantry for weeks and getting rid of those prepacked hot chips bags frees up a bunch of valuable freezer space!

This crispy vegan wedges recipe is so straightforward and very quick to prepare - the only tough part is waiting while they bake in your oven.

For this crispy vegan wedges recipe I add some simple flavourings such as salt, garlic powder, dried oregano and a bit of nutritional yeast for that slight cheesy/savoury taste.

The oven times for this recipe is subjective depending on your oven and how crispy you want your vegan wedges to be. So definitely experiment until you get to your desired outcome

INGREDIENTS

Extra Crispy Wedges

  • 5 large potatoes

  • 1/3 cup olive oil

  • 1 tsp salt

  • 1 tbsp garlic powder

  • 1 tbsp dried oregano 

  • 1/2 cup vegan parmesan/nutritional yeast


METHOD

  • Preheat the oven to 200c

  • Wash and peel potatoes. Cut in half and then into wedges.

  • Place potatoes in a mixing bowl, adding oil, salt, garlic powder, oregano and vegan parmesan. Toss to combine

  • Place on an oven tray, ensuring that you spread the wedges.

  • Bake for about 45-50 minutes
