Vegan Curried Sausages
300g vegan sausages
1 brown onion, diced
2 carrots, sliced
2 garlic cloves, minced
2 tbsp curry powder
2 tbsp jam (I use strawberry)
2 cups veggie stock
1 cup frozen peas
METHOD
Fry up sausages in a fry pan with a little bit of oil. Once cooked, set aside and slice
Place onion, carrots and garlic into a pan and cook for about 5 minutes.
Add curry and mix until fragrant
Add jam, stock and sausages and allow to simmer for about 20 minutes and sauce has thickened.
Add peas and cook for a further 5 minutes
