Dill Chevre Stuffed Pasta Shells

This meal right here is ULTIMATE comfort! Easy to whip together and so flavoursome.⁠

⁠If you can’t find a dill chevre, just alternate with a cream cheese of choice and add a tablespoon of dill.

INGREDIENTS

Dill Chevre Stuffed Pasta Shells:

  • 250g Pasta Shells⁠

  • 1 brown onion, diced⁠

  • 2 garlic cloves, minced⁠

  • 1 carrot, diced⁠

  • 1 zucchini, diced⁠

  • 1 can diced tomatoes⁠

  • 2 tbsp tomato paste⁠

  • 2 cups vegetable stock⁠

  • 190g Dill Chevre

  • Grated mozzarella ⁠

METHOD

  • Cook pasta as per packet instructions and preheat oven at 180c ⁠

  • Meanwhile, add olive oil to a frypan and cook onion and garlic until lightly browned. Add in carrot and zucchini until tender.⁠

  • Add in diced tomatoes, tomato paste and vegetable stock. Allow to simmer until sauce begins to thicken. Take off heat⁠

  • Place sauce in a prepared oven dish and scatter mozzarella cheese over the top.

  • Place Dill Chevre into a large bowl and beat until smooth. Spoon into cooked shells and arrange in prepared oven dish⁠

  • Place in oven for about 10-15 minutes until cheese has slightly melted and pasta is lightly browned
