Dill Chevre Stuffed Pasta Shells
This meal right here is ULTIMATE comfort! Easy to whip together and so flavoursome.
If you can’t find a dill chevre, just alternate with a cream cheese of choice and add a tablespoon of dill.

INGREDIENTS
Dill Chevre Stuffed Pasta Shells:
250g Pasta Shells
1 brown onion, diced
2 garlic cloves, minced
1 carrot, diced
1 zucchini, diced
1 can diced tomatoes
2 tbsp tomato paste
2 cups vegetable stock
190g Dill Chevre
Grated mozzarella
METHOD
Cook pasta as per packet instructions and preheat oven at 180c
Meanwhile, add olive oil to a frypan and cook onion and garlic until lightly browned. Add in carrot and zucchini until tender.
Add in diced tomatoes, tomato paste and vegetable stock. Allow to simmer until sauce begins to thicken. Take off heat
Place sauce in a prepared oven dish and scatter mozzarella cheese over the top.
Place Dill Chevre into a large bowl and beat until smooth. Spoon into cooked shells and arrange in prepared oven dish
Place in oven for about 10-15 minutes until cheese has slightly melted and pasta is lightly browned
