Chickpea ‘meat’ Ball Sub

Make a SUBWAY-inspired meatball sub with this little chickpea alternative!

Simple to make and incredibly delicious.

INGREDIENTS

Chickpea 'Meat' Ball Sub

Chickpea Balls:

  • 1 & 1/2 tbsp flaxseed

  • 1/4 cup water

  • 1 can chickpeas

  • 3/4 cup walnuts

  • 3/4 cup breadcrumbs 

  • 3 tbsp olive oil

  • 2 tbsp parsley 

  • 2 tbsp oregano 

Marinara Sauce:

  • 1 brown onion, diced

  • 1/4 cup red capsicum, diced

  • 1 can diced tomatoes

  • 1 tbsp tomato paste

  • 1 cup vegetable stock

Subs:

  • Sub rolls

  • Nutritional yeast 

METHOD

  • Pre heat oven to 250c

  • Add flax and water to small bowl and mix. Let sit to thicken

  • Drain and rinse chickpeas. Add chickpeas and walnuts to blender. Blend to combine.

  • Add mixture to a large bowl. Also add flax mixture, breadcrumbs, oil, parsley, oregano.

  • Stir together - add more breadcrumbs if too wet, more oil if too dry.

  • Roll into small balls and place on prepared oven tray

  • Bake for about 20-30mins, or until firm and slightly browned

  • For the marinara sauce, add diced onion and capsicum to fry pan with oil on medium heat. Cook until slightly browned

  • Add diced tomatoes, tomato paste and vegetable stock, mix to combine. Cook and allow sauce to thicken

  • Add sauce, a few balls and sprinkle some nutritional yeast into a sub roll
